Yield: 6 cups of soup

Ingredients:

5-6 cups vegetable stock

1 can diced tomatoes

1 1/4 cups lentils, rinsed

1 celery stalk

1 carrot

1/2 onion

2-3 garlic cloves

1 teaspoon fresh thyme

1 teaspoon fresh oregano

1-2 tablespoons olive oil

Salt and pepper, to taste

Directions:

Heat oil in a large pot, and add the diced vegetables and onion. Sauté until fragrant, about 5 to minutes.

Add the garlic and sauté for 3 minutes.

Add the remaining ingredients and bring to a boil.
